Sunday Meal Plan - Week 46

Hello! Happy Sunday! Just so you know, over on Instagram I will be sharing a weekly roundup of what we *actually* made from last week's meal plan. Below is what's on tap for this week!

These Pumpkin Lasagna RollUps look great! It is supposed to cool back down later this week, so I think these will be great on a chilly fall night. 

Sweet Potato/Black Bean enchiladas from Pretty Simple Cooking. I found this recipe on their blog that is pretty similar (same filling but different enchilada sauce). These are so yummy and make great leftovers! Sometimes I double the red sauce to use for chilaquiles later in the week. 

I will also make goat cheese pasta sometime this week! I have a general recipe I use (shallots/garlic + kale + 4oz goat cheese + 1 pound pasta) but often mix it up. Sometimes I will add squash, mushrooms, beans, or tomatoes. It's super flexible, so feel free to make it your own! This is a similar recipe. 

This Spaghetti Squash Parmesan is an easy weeknight meal and super customizable! You can easily sub in your favorite sauce, whether its a Bolognese or a white sauce. I have a jar of pumpkin pasta sauce from Aldi I think I will use! 

This is the pumpkin pasta sauce we love! Definitely worth picking up if you see it.

Kung Pao Cauliflower with some rice and a carrot/cabbage slaw. Something fresh and flavorful for a weeknight!

Sweet potato/arugula/wild rice salad would make great lunches! I think you could even prep this by making the different components ahead of time and then assembling throughout the week as you eat it. 

I think these Pumpkin Oat Bars would be great for breakfast prep this week! I may even make them this morning to have for Sunday brunch.
