Recipe Review: Pumpkin Pierogies

Hey hey! Today I'm coming at you with a recipe review. I made these pumpkin pierogies and wanted to let you know what I thought of them. (And of course, don't forget to vote if you haven't already!)

I was excited to try these! I have fond memories of having pierogies growing up - my mom made the kind that came frozen and were filled with cheesy potatoes. They were so good! I was excited to try these, since they seemed like a more grown-up, fall version of this extremely comforting food.

Going into this I knew it would be somewhat labor intensive, but it didn't seem intimidating at all! I have made gnocchi before and have been fairly successful with that. Putting together the dough and and filling was straightforward! I rolled out the dough and used a wine glass to cut out all the circles - lol. I think I may have overfilled them slightly, but it was hard to gauge. They are definitely not the prettiest!

The boiling/cooking went okay, but was where I had the most difficulty. I browned the butter and sage, which is a delightful fall combination. I did find it somewhat difficult to get the timing right from initial boil to brown in the butter. Especially as it went on, the butter continued to cook (and started to go a little past brown) but I wasn't done browning the pierogies. Perhaps I should have finished boiling all of the pierogies first, and then cooked them all in the brown butter. But I was worried they wouldn't stay warm enough since boiling all 25ish took about twenty minutes.

Overall, they turned out okay! I couldn't get them quite as brown as I wanted in the pan. However, they did have a nice texture, and I thought the filling was lovely! I served these with some brussels sprouts.

Overall, these pierogies were pretty good. Not my favorite thing I've made or eaten, and I'm not quite sure it was worth all the work (it took about an hour and a half start to finish). I would say they get 3.5/5. Pretty good, and a fun fall project, but not a quick weeknight meal. The brown butter and sage definitely boosted their score! I will try that again but just use store-bought ravioli.

Would you try these??
