Monday Meal Plan - Week 49

 Hello! I am back at it after a few days off for the holiday last week! We had a wonderful break and enjoyed a great meal on Thursday. 

I've had a few days off from cooking (Thanksgiving leftovers are wayyy more delicious than regular leftovers!), but, now we are back to our regular schedule and regular cooking. 

We had this awesome cheeseboard on Thanksgiving! As you can imagine, this was a lot of cheese for two people, so we have quite a few leftovers. I'll use these leftovers to make some grilled cheeses that we will have with a salad (I feel like my body is craving greens after all the carbs last week!). Maybe a repeat of this pomegranate & walnut salad I made a few weeks ago.

Also on the meal plan is this butternut squash chili. This is our favorite chili recipe and you'll notice it on repeat this winter! The leftovers are perfect for weekday lunches. 

To have a nice fresh meal that's very different from our heavy Thanksgiving plate, I'll make some peanut noodles with tofu and cabbage salad. I made this cabbage salad a few weeks back and it was so good! It's really flexible too - you could easily mix up the vegetables you use (think cabbage, carrots, snap peas, cucumber, radishes, peppers...whatever you like!). 

I'll make sheet pan gnocchi one night this week. This is a great, quick meal, and is one of those that you can throw anything you have on there! We have some random bits and ingredients leftover from Thanksgiving we will use up on there. 

On a particularly chilly night this week (there are a few of those in the forecast!) I'll make a vegetable pot pie. I've tried a few different recipes and techniques, like this one which has worked out well for me in the past. The pesto is really wonderful and not overpowering at all in the recipe!

And maybe we'll have a few more Thanksgiving leftovers (desserts especially!). How was your holiday? And what will you make this week?
