Sunday Meal Plan - Week 47

 Hello and happy (rainy) Sunday! Here's what's on tap for our meals this week. 

These spring rolls sound delicious! I've never made rolls like this but I think it sounds totally do-able. And delicious! I also have some avocados that are in their perfect 3-day window, so I'll add those, too.

We'll also make some homemade pizzas this week! Sometimes we buy premade dough from a local pizza place or sometimes I make the dough. Our favorites toppings to do are: red sauce with mushrooms, onions, and spinach, or barbecue sauce with sweet potatoes, red onions, cilantro, and avocado. Kind of like barbecue chicken but sweet potato instead! 

These cauliflower schnitzel sandwiches look yummy! I've never tried this recipe but it looks pretty straightforward and I love pickled cabbage. I think we'll use sourdough slices for the bread. 

We will also probably make some sort of tacos this week...maybe something with black or pinto beans? Or some sweet potatoes? I also have a rutabaga to use up. That could probably go in a taco somehow, right??

This acorn squash soup with some grilled paninis would be perfect on a chilly night. I love that everything is just roasted on a sheet pan! Simple but comforting. 


For dessert, we'll continue to enjoy these peanut butter chocolate cookies through the week! I made them last night. It's from Love Real Food, but here's a review that includes the recipe! I did half per the recipe, and the other half I left out the chocolate chips and instead dipped in chocolate. Yummm. I find these cookies to be extra good when you leave them in the freezer - they taste like frozen peanut butter cups!
