Sunday Meal Plan - Week 45

 Happy Sunday! I feel like we are barreling towards the holidays - I have already purchased a few Christmas gifts! I am excited, but also cannot get over how strangely time is moving this year. But we're back at it! Time for another meal plan post. And, don't forget to vote this week (if you haven't already!). 

Ramen with fried eggsThis is totally comfort food to me. We make a slightly different version of this already, but I'm excited to try it with the mushrooms!

Quesadillas! We made those taquitos early last week, and have some leftover beans. So we'll fill the quesadillas with those, and make some quick guac and corn salsa, and, dinner! Easy and perfect for a weeknight (or anytime you don't really feel like cooking!). 

Okay, and to be honest, a few things from last week didn't quite get made! We ended up having leftovers so a few things from last week are getting rolled over into this week. 

Butternut baked ziti!  I just realized we don't have enough parmesan so I think I will sub some other kind of cheese, whatever I can find in the fridge!

Sheet pan gnocchi is another awesome, quick weekday meal. I have some cauliflower I will also throw on there!

I think I am also going to make a batch of this granola for breakfasts/snacks this week. I usually make this every few weeks to have around! Good to keep in the freezer so it stays fresh. 

Carrot ginger grain bowls from Love and Lemons Everyday. This cookbook is such a great resource! It divides the recipes by ingredients (apples, squash, peas, etc.) and is a great way to cook with what you have. 

And probably a few more of these cookies.....
