2021 Holiday Cookie Box

 'Tis the season....cookie season! Although truly, you know I believe cookie season is year-round. Here's a look at what's in my cookie box this year! You can check out my 2020 cookie box and see what I made last year. There are some returning and some new! 

I started with these dark chocolate orange cookies. These were my favorite new cookie last year! And they are just as delicious as I remember. Yum. 

These soft gingersnap cookies are so pretty and sparkly since you roll them in sugar before baking. A nice way to have a gingerbread-y flavor in your cookie box. 

I tried these chocolate covered brown butter millionaire bars! I'll be honest, I only covered about a third of the batch totally in chocolate. It was a little too labor-intensive to do them all, lol. The others I just topped with a layer of chocolate more like a normal millionaire bar! 

These almond butter coconut macaroons were pretty easy, and add such variety to a cookie box! I looove coconut, so I'm all for these. 

I made these hot chocolate lace cookies again this year. I thought they were so tasty last year! And, another unique addition to the cookie box. 

I opted out of the regular peanut blossoms this year, and instead made these peanut butter balls. I feel like they are very classic Christmas cookie and I love it. 

Two of my cookie recipes came out of Shauna Sever's Midwest Made. I know I reference this book frequently on the blog - because it's FULL of gems. For my cookie boxes, I made her kolacky recipe and her chocolate cookie brittle. 

I also made some peppermint meringues but truly, they failed. Lol. I do not know what happened! My egg whites never reached stiff enough peaks. The meringues tasted good and were cute, but just not quite right. Maybe my eggs whites were too cold? Or my hand mixer wasn't powerful enough and couldn't get enough air? Maybe I overmixed?? 

Not pictured but the last few cookies I will make this year are lemon crinkle, shortbread bites, and some classic cut-out sugar cookies!
