Weekend Review - Vol. 13

 March 26-27, 2022

Hi there! How's your week going? Halfway through, so that's good. We had a good weekend. Last March weekend! Wow. This month felt pretty full to me. 

Friday started with these burritos and a chipotle corn salad from Everyday Dinners. This was the first time I've made it, and it was so good! After dinner we watched Cabaret! I knew some of the songs, but this was my first time seeing the movie. It was good! Then we were discussing the best movie musicals, and watched the first 45 minutes of Hairspray, which includes like seven songs, and they are all. so. good. I love Nikki Blonsky and the whole cast. 

Saturday morning I got up and made some whole wheat waffles! I got the recipe from Pretty Simple Cooking. I love this book!! This was the first cookbook I really dug into after I graduated college and started cooking for myself. I love Sonja and Alex - their website is also full of great ideas. I used to make a lot of pancakes/waffles on the weekends, and I haven't in a while, so this was a fun treat. They were so good!


Saturday afternoon we ran a bunch of errands. Hardware store, thrift store, grocery store, gas, etc. The whole gamut! I made these quinoa patty bowls for dinner. This meal is so good - its a little different than the other meals we make (in terms of composition - having a peanut/chickpea patty is unique!) and we love the peanut butter/Thai-inspired flavors. So good! I used to make them into more of a meatball shape, but realized I could save some work by making bigger + less patties, lol. 

We were going down to Illinois on Sunday and having dinner with my family, so I did some cooking and baking on Saturday night to prepare. I made these brown butter peanut butter rice crispy treats to bring. I loved them! I'm not always the biggest rice crispy treat fan, but the peanut butter + brown butter combo really made it for me. 

Sunday morning we got up, walked Millie, packed up, and drove down to Illinois. We spent the afternoon with my family, moving some furniture and then having a soup bar for dinner. It was delicious! How was your weekend?
