Sunday Meal Plan

 Hello hello! We are getting things in order for the upcoming week. Here's what on my meal plan. 

My mom has been making this Tuscan butter salmon for a while and its one of our favorites. Soooo good and very easy!


Dan requested spring rolls, so we will do those for an easy dinner or lunch one day this week! I especially like them pan fried so they are crispy. Our faves have cucumber, cabbage, avocado, carrots, tofu, and some rice noodles inside. Paired with a little peanut sauce and it is perfect!


I love this sun dried tomato skillet gnocchi (and really all things sun dried tomato). Very easy and soo good! Kind of tastes like pizza in the best way. 

I rented The Weekday Vegetarian from the library last week (inspired by Ashley Spivey) and its giving me tons of new ideas and recipes to try! The tofu bahn mi sandwiches are soooo good and fresh. Just have to remember to marinate the tofu the night before. 


I'm trying these chocolate chip cookies this weekend. If you read the whole post, there is a lot of thought that went into these cookies, down to the ice cube you add to the browned butter to replace the moisture lost. Yum! I am also going to making these granola scones for a breakfast/snack this week. They are delicious and really customizable. What are you eating this week??
