Sunday Meal Plan

 Hiii! Another week, another round of meal/snack/breakfast ideas coming atcha. 

These homemade spaghettios are frequently in the rotation here. They are super easy and tasty. The crunchy manchego (I've swapped out parm or asiago and its worked great!) topping is a nice addition, but I often skip if I'm short on time! We love to pair with a simple vegetable or salad. 


I accidentally bought double the amount of tilapia a few weeks back, lol, so my freezer is full. To use up some of that, I'm going to try out this lemon pepper parmesan tilapia. Sounds so good!!

I'm hoping for one clear (and not totally freezing) day this week so I can do the first grill of the season! No better way to start than black bean burgers. This is my favorite recipe! I love to double it when I make them and put half in the freezer to use at another time. 


Dan reminded me that we haven't had stuffed shells in a while! Those are so good, and this is the recipe I base mine off of. I usually add cannellini beans and sometimes mushrooms or other vegetables I have on hand. 

We went to Costco yesterday, so I picked up a Mediterranean salad kit to have for work lunches this week. And we also got some frozen cherries, so I'll make a smoothie for breakfast with those! Annnnd, I also will likely make some cookies or other baked treat. What are you making this week??
