Best of the Blog - Cinnamon Rolls from Love and Lemons

This cinnamon roll recipe is straightforward, and also completely vegan! Cinnamon rolls are always a hit, perfect for a holiday, special occasion, or even just a regular weekend :) I have a different go-to cinnamon roll recipe that uses real milk and butter, so I was curious to see how this recipe would hold up considering it is vegan. I was hoping it would have the same richness, gooey centers, and sweet dough I love!

First you start by mixing the yeast with the warm water and a little sugar to get it going. Then you mix together the other wet ingredients, and add the yeast to the other wet ingredients after it has bubbled up. 

Add the wet ingredients to the flour, and mix with a big spoon until everything is evenly incorporated. After that, you turn the dough out onto a lightly floured surface, where you knead for a few minutes. 

Place the dough into an oiled bowl (I used the same bowl from earlier - one less dish!) and let it rise for about an hour. Once risen, turn the dough out onto a floured surface. 

You'll roll the dough out into a big rectangle and spread some more coconut oil and the brown sugar/cinnamon mixture onto it. 

Roll up the dough and slice into 12 rolls! Then place into your greased pan. At this point you let it rise for another hour before baking. I was making mine in the evening with the intention to bake the next morning - after reading some comments on the original post, it seemed like a safe bet to put the rolls in the fridge at this point. I'll took them out the next morning and let come to room temperature for about an hour for baking!

Then you pop in the oven to bake until golden brown. This makes your house smell like a dang bakery. Amazing!

Then take them out and cover with the glaze once slightly cooled (a simple powdered sugar + almond milk + vanilla). 

These were fantastic!! I think Love and Lemons nailed it, giving these rolls enough richness without using butter or dairy products. I can totally see why these are so highly rated! Yum!
