Best of the Blog - RachLMansfield's Healthy Flourless Brownies

Welcome back to "Best of the Blog" where I review top-rated recipes from popular food blogs! Today we're reviewing RachLMansfield's Healthy Flourless Brownies. These bad boys come in with a five star rating from 73 reviews!

These brownies are super easy to put together - one bowl recipes are the freaking best. 


First you combine your wet ingredients - tahini, maple syrup, eggs, coconut sugar, and vanilla. Then you add the dry ingredients. I subbed coco powder for cacao powder no problem!


The batter is thick and glossy, rich in color, and smells so good. Amazinggggg. 


Stir in your chocolate chips or chunks, and then spoon the batter into the pan. You'll really have to spread it since the batter is so thick! Feel free to add a few extra chips on top. She suggests an 8x8 but I used a 9x9 without issue! Just baked for a few less minutes since mine were a little thinner. 


Put them in the oven and bake. Keep an eye on them - its a little hard to tell when they are done since the color doesn't change, just the finish as they go from glossy to matte!


Let cool to help them set and then slice. I used a plastic knife (supposed to make it a little easier to cut brownies) and it worked okay! Still messy but better. 


These brownies really impressed me! I like tahini in both savory and sweet dishes, but was surprised at how subtle it was in these brownies. But it really lends to the fudgy, chewy, rich texture of these brownies. Definitely don't skimp on the chocolate chips/chunks, which enhance the chocolate-y-ness. I think these are a great option, whether you're looking "healthier" brownie or not! I can totally understand why these are best of the blog. Let me know if you give them a try!
