Sunday Meal Plan

 Happy Sunday! Hope you're having a great weekend - either slow & restful, moving & grooving, or somewhere in between. Here's what on my menu for this week (it's a short one!). I'm trying to use up what we have in the fridge before we are gone for the holiday next weekend!

Tonight I'm going to make butternut squash chili + beer bread. I'm hoping this will give us plenty of leftovers going into the week!

I'll keep it simple this one night this week and make ramen with an egg on top. I love to have something easy in the rotation every week, especially a busy week like this leading up into the holiday!


Another night this week I'm going to make roasted acorn squash with savory, spiced rice and vegetables. This recipe looks very similar to the one I make, but without the cranberries (although that sounds good, too!). 

I'll make spring rolls with tofu to use up any leftover produce in the fridge. If I'm feeling it, we will pan fry them so they are nice and crispy!

And then the last thing on my menu is to make this sheet pan pierogi. I've never tried this before but thought it looked tasty, not too labor intensive, and was a great way to use up a box of pierogi I've had in my freezer for a while! I'll serve it with a salad or maybe some brussels sprouts. 

And the other thing I'll be making this week cookies! Just got a few more to go :)
