Sunday Meal Plan

 Happy Sunday! Another week is here and we are getting sooo close (!!!) to the holidays! Phew. Here are some meal ideas for you this week!

Cauliflower black bean tacos are one of our favorites and make the rotation often. We use the recipe from A Couple Cooks book "Pretty Simple Cooking". This recipe is super similar (and they directly credit A Couple Cooks!). The cauliflower gets spicy with crisp edges, and the beans are the perfect creamy, hearty addition. Yummmm. 

Keep it simple one night and do packaged ravioli. We actually had this last night! I love butternut squash ravioli this time of year! I usually do a simple cream sauce and some frozen vegetables to keep it super quick. 

Peanut lettuce burgers sound so good and fresh! You take the recipe for Minimalist Baker's meatballs and form them into patties instead. This idea is from their cookbook and so genius! Serve on a lettuce wrap bun with peanut sauce, onions, and more cilantro. The below pictures is the meatball version - so just kinda picture it in handheld size?? Lol. 

One night I'll do skillet lasagna - perfect for these cold, dark nights! This version gives the general idea of how I do mine. I make the base by cooking some vegetables in the skillet, then add the tomato products or red sauce. Boil the noodles separately for a few minutes (you don't need to cook them all the way since they'll cook a little more in the oven!), and once they are done, fold them into the skillet. Then add scoops of ricotta and I sprinkle shredded mozzarella on top! Bake for 10ish minute and broil if you want that browned cheesy top.

If you've been following on Instagram, I made a bomb burrito yesterday and I think its sending me into a burrito-shaped-spiral, lol. So I'll probably do burritos one night this week! Maybe with the cauliflower taco leftovers? Or maybe I'll do some quesadillas. Love to have a few simple ideas on the menu, especially during this time of year!
