My Go-To (Weekday) Breakfast Ideas

 Hi! I'm coming at you with some of my favorite weekday breakfasts. I love breakfast! However, I do not love to spend a lot of precious pre-work morning time on my breakfast Monday through Friday. The weekends are another story! But when I'm hustling to get ready for work, I just don't have time to come up with something complicated, so I stick to a few options that always work for me. Of course, I do change things up once in a while, but I would say I go for one of these options 75% of the time. Keepin' it simple over here!

Smoothies are one of my all time favorite breakfasts! I have been making smoothies for breakfast since high school and it was even my job last time my whole family was together on vacation! Here is the link to My Favorite Smoothie! It's a berry smoothie and is so yummy. Below is another recipe for one of my favorites smoothies.

Cherry/Raspberry "Chocolate" Smoothie

1 banana

1 handful greens

2-3 heaping spoonfuls of Greek yogurt

1 handful frozen cherries or raspberries

1-2 spoonfuls of coco powder

Chia seeds and/or flax seeds

Milk of your choice in the remaining space

Again, just blend! I should mention here that I prefer smoothies that I can actually drink (I am not usually sitting down to eat in the morning lol) but if you like thicker smoothies than you may want to use a frozen banana or less liquid! I also am not big on protein powder but you could probably add some of that here. I love to add greens to balance out the smoothie and you can't taste them. Obviously, play with these recipes to make it what you like! These are just suggestions and what I usually reach for in the morning to keep it simple. 

Toast! Is probably my favorite meal of all time. We have a joke in our house that if I am ever feeling bad, or hungry, or emotionally unsure, I should have a piece of toast. It's my cure-all. I think I am going to do an entire post devoted to toast, lol. It's just incredible! But it is also often my breakfast. I love to do a piece or two of sourdough with butter and flaky salt on top. It is so simple and yet, just perfection. You have to try flaky-salting your buttered toast. With some avocado or tomatoes and a fried egg! 

I also love a classic whole wheat/seedy bread toast with nut butter situation. Adding fruit (berries, banana, kiwi) is a great way to take your toast to the next level. I also sometimes do hagelslag which is a traditional Dutch treat with chocolate sprinkles (there are also fruit and licorice flavors! You can see them all here) on buttered bread. But, I usually do toasted bread! 

Yogurt with this granola! And some kind of fruit. I've been making this granola for years and it is awesome. So flexible, too! You can add whatever you want, and adjust the spices as you like. Cashews, almonds, pumpkin seeds, peanuts, dried fruit, banana chips, coconut, chocolate chips...the possibilities are endless.  

My last favorite idea is either pumpkin or banana bread (or muffins!). This is my favorite recipe. I actually use this recipe for either pumpkin bread too, and just sub the pumpkin puree for banana in the exact same quantity. Sometimes I add chocolate chips, walnuts, or pecans, but this is so flexible that you could customize it how you like!
