Sunday Meal Plan

 Hello hello! 2022 here we are. I have mixed feelings on the whole new year thing, but I can appreciate a fresh start. Here's my meal plan as we get back into routine this week! Trying to mix in some easy meals with some familiar favorites, and maybe something new to look forward to.

This creamy tomato and spinach pasta is quick to throw together, but still super warm and comforting. Perfect if you got a ton of snow last night like we did!

One night we will do sheet pan gnocchi. That's the recipe I base mine off of, but there are tons of ways you can customize it to your liking. 

I think I'll make buttermilk pancakes for a little breakfast for dinner one night this week. I usually just do the milk + lemon juice sub for buttermilk, but I recently tried real buttermilk in pancakes and it was awesome! 

I'll make these sweet potato and black bean burgers. We love to serve them with guacamole and a little lime/cabbage slaw. That's how Kate suggests in her cookbook, Love Real Food! These make great leftovers, too. 

For another easy night we will do some sheet pan tofu. This recipe looks great, although I might do some other or different vegetables.

To end the week, I want to try this spicy pesto pasta alla vodka. Yummmm. I've never made vodka pasta before, but I'm really excited to try it!
