Sunday Meal Plan

Hi! Happy Sunday! I didn't really know what to make this week for dinner, lol. So I went looking for inspiration. We are going out of town next weekend so I'd like to use up what we have, especially any fresh stuff. 

Today I'll prep some burrito ingredients and then we can have those for lunches or an easy dinner this week. I have one sweet potato in my pantry that I'll roast, and I'll also sauté some onions and peppers. Maybe make some saucy black beans? I really like this recipe for black beans!

I had a friend text me about a new crockpot this past week, which inspired me to pull mine out and use it! One night I want to try doing some butternut squash curry type recipe in the crockpot. I'll probably combine this recipe (for the lentils) and this recipe (probably more for the sauce). And then serve with rice!

This pad thai recipe sounds good! I'll make it near the end of the week so I can use up any produce we have left. And we don't have any tofu so maybe I'll double the eggs. 

This creamy sun dried tomato pasta looks so good to me! Of course we'll skip the chicken. Probably do cannellini beans instead. I feel like mushrooms would also be good in there. 

I have a head of cauliflower to use up, so I'm thinking about doing some cauliflower tacos. This recipe is the same cauliflower + black beans we like, and then adds a different sauce that also sounds delish! The original recipe is from Pretty Simple Cooking

On Christmas we had this sun dried tomato feta dip from Costco and I can't stop thinking about it! I think I'm going to try to re-create it today. I'm looking at this recipe and this recipe for inspiration. 

We are still finishing our Christmas cookies, but I found this no bake pretzel PB bar recipe that looks amazing. Not sure if I'll get to them this week, but will definitely be making soon!
