Weekend Review - Vol. 9

 Hello hello! We had a wonderful weekend. The weather is really warming up and it is so nice to feel like spring is actually coming. 

We had a productive weekend! On Saturday we ran a few errands (returns, library, etc.). Regular stuff!

On Saturday night, we had tickets to a candlelight hike event at the Urban Ecology Center. It was lovely! They set up a loop that was about a mile around Riverside Park, and lit the edge of the trail with some small tea candles. We went around dusk and it was stunning to watch the sunset. There were a few different campfires set up along the way that you could stand around to warm up. We even got to have a s'mores!


When we got home, I made the Tiktok feta/tomato pasta. I added some extra ingredients (mushrooms, spinach) to beef it up. Overall, we thought it was pretty good. I am going to try it again but use goat cheese instead! Dan and I agreed the technique was novel but the flavors were just okay. We also watched Enola Holmes and popped some popcorn (we had been talking about how much we missed going to the movies earlier that day!). 

On Sunday I made some baked oatmeal for breakfast! It was great. I use this recipe from Cookie and Kate, and then modify as I'm feeling. I've been making this for the last few weeks and it has been really nice to have for quick weekday breakfast. We also did some life/home stuff! Laundry, cleaning, etc. We finished our weekend with our standing game night with a group of friends. It was so fun!
